Changes in taxonomy reflect the impact that molecular methods have had on our understanding of classification but, it must be said, have not radically altered the overall picture. The improvements in the understanding of the physiology of food spoilage fungi have been relatively small, reflecting perhaps the lack of emphasis on physiology in modern mic- biological science. Much remains to be understood about the specificity of particular fungi for particular substrates, of the influence of water activity on the growth of many of the species treated, and even on such basic parameters as cardinal temperatures for growth and the influence of pH and preservatives. Since 1997, a great deal has been learnt about the specificity of mycotoxin production and in which commodities and products-specific mycotoxins are likely to occur. Changes in our understanding of the ecology of the included species are also in most cases evolutionary. A great number of papers have been published on the ecology of foodborne fungi in the past few years, but with few exceptions the basic ecology of the included species remains.

The first and second editions of Fungi and Food Spoilage established a reputation as the foremost book on foodborne fungi. This completely revised and updated third edition is an invaluable reference for food microbiologists investigating fungal spoilage and sources of mycotoxin contamination in foods.

The introductory chapters of the book deal with the ecology of food spoilage and give an overview of how food processing, packaging and storage affect fungal growth. Subsequent chapters cover the fundamentals of classifying and naming fungi and current methods for isolation and enumeration, including general and special purpose media, incubation conditions, etc. The major part of the book provides keys, descriptions and illustrations of all yeasts and moulds commonly encountered in foods. Characteristics of the species, including their ecology and potential for mycotoxin production, are also included.

The broad and practical nature of the coverage will appeal to microbiologists, mycologists and biotechnologists in the food industry, academic, research and public health institutions.

Dr John Pitt and Dr Ailsa Hocking are both Honorary Research Fellows at CSIRO Food Science Australia, North Ryde, NSW, Australia.

This book was in top notch shape and was sent carefully packaged. I was leery about ordering something so expensive online as a senior college student and left a nasty comment before hand about it not arriving by the date it said it was supposed to be delivered but it turned out that I must've read the ship out by date wrong as if it were the date to look for it in the mail.. I apologize, because I ended up getting my package the same day later on after I had already checked my mail and left the comment. Must read explanation of economics

Dani Rodrik explains economists, their methodologies, biases, strengths, and weaknesses for non economist intellectuals. The book read like an extended opening statement at an Ivy League faculty dinner debate. The defensive attitude is impossible to miss but does not detract from the overall quality of the arguments. It would be fascinating to read a rebuttal by an equally talented academic from a competing discipline. It would be equally enlightening to watch Professor Rodrik arguing for the negative team in an Oxford style debate on the question "Resolved, economists are so full of it their eyes are brown." He just might win over the audience. At the very least he would make them think. I am curious who he would recommend as his opponent in that debate.

Very thoughtful summary of recent progresses in economics

I teach economics and yet learnt a lot. Rodrik is an outstanding writer and this book is better than many of his other ones. I'll use it in my courses, because it points at how to use the toolkits that we have in store. We do this constantly, without realizing. Here, Rodrik puts the process in plain light and helps us id and systematize it.

Can economists be counted on?

This is a personal reflection of an economist on his profession. Rodrik wants to answer the question 'In what sense is economics a science?' In doing so, he criticizes some economists that 'are not always good about drawing the links between their models and the world.' (p.171) He ascribes their failings to 'the guild mentality renders the profession insular and immune to outside criticism.' (P.171 - 72) Nevertheless, he states clear his own views on economic models, what they are and what they can and cannot do with a lot of examples. After all, models make economics a science. Accordingly, progress in economics is advanced not by discarding old models but by collecting more newer ones, all useful in some context-specific settings. One important caveat, economics as a social science is not to be confused with physical science.

I appreciate Rodrik's undogmatic and eclectic approach to doing economics. Also, I believe that is the right attitude to knowledge-seeking.
